Homemade baked sweet and sour chicken
Homemade baked sweet and sour chicken
For your chicken:
3-4 boneless, skinless chicken breasts
Salt and pepper
1 cup cornstarch
2 large eggs, beaten
¼ cup canola, vegetable or coconut oil
Sauce:
½ to ¾ cup granulated sugar
(depending on how sweet you want the sauce)
4 tablespoons ketchup
½ cup apple cider vinegar
(I used lemon juice as substitution)
1 tablespoon soy sauce
1 teaspoon garlic salt
-
Start by preheating your oven to 325°F. Then cut your chicken breast into 1 to a 1/2-inch chunks, make sure to pat them dry and then put them in a bag. To the bag add in your salt, pepper and your corn starch making sure all the chicken is fully coated.
Next in a bowl, add in two eggs and then beat them. Add your chicken to the egg wash making sure it’s fully coated. Add your chicken to a lightly oiled pan and fry (medium to low) just until the outside is browned not fully cooked in the middle.
Once all your chicken and browned, in a baking dish (9x11 or bigger if you make double) add in your chicken. In a separate bowl make your glaze. Add 3/4 cup sugar, 4 tablespoons spoons ketchup, 1 tablespoon soy sauce, 1 teaspoon garlic salt and 1/2 cup Apple cider vinegar (or if you don’t have any you can replace it with rice vinegar or lemon juice) mix together and pour over the chicken and make sure you mix it to get all the chicken covered in the glaze.
Pop it into the oven and cook for 1 hour, or until the chicken is fully cooked through. Then serve with rice! We also had chicken potstickers, got them from Walmart! I’ll link them if you want to try them.
