Blackberry cobbler
Blackberry cobbler
1 ¼ + 2 tablespoons sugar (separated)
1 cup self-rising flour
1 cup milk
½ stick butter (melted)
2 cups fresh or frozen blackberries
Note: If you use frozen blackberries, make sure to add them when they are still frozen or they will become mushy, and the texture will be off.
Preheat the oven to 350°F. Combine 1 cup of sugar with the flour in a large bowl. Stir in the milk, then the melted butter. Mix until well-combined. Pour into a 9x9 baking dish. Then distribute your berries over the top. (They’ll sink further in as they bake) Sprinkle over the top the remaining ¼ cup of sugar over the top. Then bake for 50 minutes. Remove from the oven and sprinkle the other 2 tablespoons over the top. Bake for an extra 10 minutes, or until the top is a golden brown.
